Soft Pretzels Stuffed with Mozzarella
Instructions:
- Make the Dough:
- In a small bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture and melted butter. Mix until a soft dough forms.
- Knead the dough on a lightly floured surface for 8–10 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
- Prepare the Baking Soda Bath:
- In a medium saucepan, bring 4 cups of water to a boil. Slowly add baking soda, stirring until dissolved. Remove from heat and let cool slightly.
- Shape and Fill the Pretzels:
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Divide the dough into 12–16 equal pieces. Roll each piece into a 6–8 inch rope.
- Flatten each rope slightly and place a mozzarella stick in the center. Fold the dough over the cheese, pinching the edges tightly to seal.
- Dip in Baking Soda Bath:
- Carefully dip each stuffed pretzel into the baking soda bath for 20–30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
- Top and Bake:
- Brush each pretzel with egg wash and sprinkle with coarse salt.
- Bake for 12–15 minutes, or until golden brown.

- Brush the warm pretzels with melted butter for extra richness.
