This Mediterranean-style skillet, often compared to shakshuka, is a hearty and flavorful dish. Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 1½ cups (360ml) canned diced tomatoes (or fresh tomatoes, chopped)
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • Salt and pepper, to taste
  • 200g (7 oz) cooked sausage (chorizo or smoked sausage), sliced
  • 4 large eggs
  • Fresh parsley, chopped (for garnish)
