Surf and Turf Delight
Ingredients
– 2 ribeye steaks, approximately 1 inch thick
– 6 large scallops, pat dry
– 2 tablespoons olive oil
– 3 tablespoons unsalted butter
– 2 cloves garlic, minced
– 1 tablespoon fresh parsley, chopped
– 1 tablespoon fresh thyme leaves
– Season with salt and black pepper
Surf and Turf Delight
Preparation:
1. Season steak and scallops with salt and black pepper.
2. Heat a frying pan over medium heat and add 1 tablespoon of olive oil. Once hot, add the steak. Cook over medium-low heat for about 4-5 minutes on each side. Remove from the pot and let rest.
3. Add another tablespoon of olive oil to the same skillet. Add the scallops to the skillet and sear until golden brown, about 1 to 2 minutes per side. Remove and set aside.
4. Reduce heat to medium and add butter to skillet. Once melted, add the garlic, parsley, and thyme and cook until fragrant, about 1 minute.
5. Return the scallops to the pan and brush with the herb butter sauce.
6. Serve the steaks and scallops together and pour the remaining herb butter over the steaks.
