Walking Taco Casserole
Ingredients:
- 1 pound ground beef
- 1 package taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes ) green chili peppers, undrained
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 bag (9 oz) tortilla chips, chopped 1/4 cup
- green onions, chopped 1/4 cup
- 1/4 fresh cilantro cup, chopped
- Season with salt and pepper.
Walking Taco Casserole
Preparation:
1. Preheat oven to 190°C (375°F).
2. In a large pot over medium heat, stir-fry the ground beef. Excrete excess fat.
3. Mix taco seasoning, black beans, corn, and diced tomatoes with green chili peppers. Bring to a boil and cook for 5 minutes. Season with salt and pepper.
4. In a greased baking dish (approximately 23 x 33 cm), layer half of the chopped tortilla chips, then the beef mixture. Brush the beef with sour cream and sprinkle with a dollop of cheddar cheese.
5. Layer with remaining tortilla chips, beef mixture, and cheddar cheese.
6. Bake for 20-25 minutes or until cheese is melted and bubbly.
7. Garnish with green onions and coriander before serving.
