Greek Roasted Beef Shoulder
Ingredients:
– 3 pounds beef shoulder
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– Fresh oregano, 2 tablespoons, chopped
– Fresh thyme, 2 tablespoons, chopped
– Fresh rosemary , 1 tablespoon, chopped
– 1 lemon, zest and juice
– Salt and pepper to taste
– 1 cup chicken broth
Greek Roasted Beef Shoulder
Directions:
1. Preheat oven to 325°F (163°C) .
2. In a small bowl, combine the olive oil, minced garlic, oregano, thyme, rosemary, lemon zest and juice, salt, and pepper to make the marinade.
3. Rub the beef shoulder well with the marinade.
4. Place the beef in a roasting pan and pour the chicken broth over it.
5. Cover with aluminum foil and bake in the oven for about 3 hours, or until the beef is tender and falling apart.
6. Remove the foil for the last 30 minutes until the beef is browned.
